    Focaccia Bread Focaccia, a flat oven-baked Italian bread that has a similar texture like pizza dough, is an easy bread to make. The most typical Focaccia is the one with Rosemary and Olive Oil. Remember to use your finger or a utensil to dot the bread (make lots of dimples), this will help preserve the moisture. Jalapeno Focaccia This is a variation to the usual Focaccia. Though most of the ingredients are the same, I added diced colorful hot pepper, Italian seasoning and garlic salt to the dough.     Pinnacle and Pulpit Rock

    Pinnacle and Pulpit Rock Part of Appalachian Trail, the section near Hamburg PA offers great view of Lehigh Valley and surrounding ridges. The hike was moderately difficult, mainly due to the steep elevation change about a mile before Pulpit Rock, and also it’s pretty long hike, about 8.7 miles.  The first mile and half was an easy stroll, slight uphill through the woods. The deeply shaded and damp trail was perfect environment for mushrooms. Pulpit Rock I have heard from several people that there were rattle snakes in the crevasses on Pulpit Rock, but never had the luck to spot one. During our first hike in August, we did see…

    Jim Thorpe Originally founded as Mauch Chunk, the town of East Mauch Chunk and Mauch Chunk on either side of Lehigh River was combined and renamed to Jim Thorpe in 1953 after the most decorated Olympic athlete at the time. Nestled in the breathtaking Lehigh Gorge, this Victorian town has been called the “Switzerland of America” due to the picturesque scenery, mountainous location, and architecture. Lehigh Gorge Scenic Railway As we drove into town on this beautiful October day, the train station first came into our sight.
