Fish Taco with Kiwi Salsa Fish Taco 2 pieces white fish of some kind, Swai or tilapia Salt and pepper to taste Taco seasoning Flour Season fish with salt and pepper, let sit for 10 minutes, rub taco seasoning generously on both sides of the fish. Dust fish with dry flour. Heat 1 Tsp oil in non-stick pan, fry both sides for about 3 minutes each till cook through. Use a fork to break fish fillet in 2 or 3 pieces. Set aside for assembly. Zucchini Fritters Ingredients: 5 medium sized zucchinis, about 2 lb 1 cup of flour 3 eggs 1/2 cup of diced scallions 1/5 tsp of baking powder salt and pepper to taste For dipping sauce (optional) 1/4 cup of sour cream 3 squirts of Sriracha sauce a couple dashes of Chipotle powder salt and pepper to taste Directions: Grate zucchini and stir in some salt for them to sweat for about 15 minutes Squeeze out liquid from zucchini Mix all ingredients together Heat oil in no stick pan.
