    Spinach and Artichoke Dip

    Spinach and Artichoke Dip Ingredients: 1 bag of frozen spinach leaves 1 can of artichoke hearts 8 oz cream cheese 1/4 cup sour cream 1 clove of garlic minced 1 tsp garlic salt dash of cayenne pepper salt and pepper to tast 1/4 cup of cheddar cheese 1/4 cup of grated Parmesan cheese 1/4 cup of mozzarella cheese Directions Drain and chop artichoke, spinach mix all ingredients except mozzarella cheese transfer to oven safe container, top with mozzarella cheese bake 30 minutes at 350F

    Zucchini Fritters

    Zucchini Fritters Ingredients: 5 medium sized zucchinis, about 2 lb 1 cup of flour 3 eggs 1/2 cup of diced scallions 1/5 tsp of baking powder salt and pepper to taste For dipping sauce (optional) 1/4 cup of sour cream 3 squirts of Sriracha sauce a couple dashes of Chipotle powder salt and pepper to taste Directions: Grate zucchini and stir in some salt for them to sweat for about 15 minutes Squeeze out liquid from zucchini Mix all ingredients together Heat oil in no stick pan.     Brunch Casserole

    Brunch Casserole Great usage of leftover meatloaf, sausage would work nicely as well. Cut potatoes in small pieces, diced onion, saute till tender, add cut up meatloaf, milk and left cook for 15 minutes. Season with salt, pepper, paprika, chili power and cayenne pepper to taste. Transfer mixture to dutch over, add eggs, and bake 20 minutes at 350F.

    Salsa Ingredients: 4 medium size tomatoes ? 1 medium size red onion a bunch of fresh cilantro 1 lime 3 cloves of garlic chili powder paprika powder salt and pepper Sriracha sauce Directions: place tomatoes, onion, garlic and cilantro in food processor and pulse to small pieces, but not purée Add lime juice Add all other ingredients to taste
