Savory Zucchini Bread with Bacon Cheese and Herb
Jump to RecipeI remember eating zucchini bread for the first time twenty some years ago. It had a very interesting texture, dense, yet soft. I have been trying to look for that bread again with no success. Here is my attempt at making one myself. This one is for the savory quick bread lovers, and it’s my original recipe. It is full of aroma from various herbs as well as olive oil. It is also very moist. Bacon bits add a nice layer of taste and texture to the bread. If you are concerned about carb content of the bread, you can try to use almond flour to replace part of the flour, see recipe here.
Savory Zucchini Bread with Bacon Cheese and Herbs

- 1.5 Cups Flour
- 2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 2 tsp Garlic Salt, Fresh Ground Pepper to taste
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 Cup Grated Zucchini
- 1/2 Cup Bacon Crumbs
- 1 Cup Shredded Cheddar Cheese
- 1/2 Cup Olive Oil
- 1/4 Cup Milk
- 2 Eggs
Instructions
- In a stand mixer, combine all the wet ingredients
- Add zucchini, bacon and cheese, combine well
- In a separate bowl, combine all dry ingredients and slowly fold them to the wet mixture, mix well
- Preheat oven at 350F, bake for 50 minutes, test with toothpick
- Serve warm or cool
