Zucchini Fritters
Zucchini Fritters
Ingredients:
- 5 medium sized zucchinis, about 2 lb
- 1 cup of flour
- 3 eggs
- 1/2 cup of diced scallions
- 1/5 tsp of baking powder
- salt and pepper to taste
For dipping sauce (optional)
- 1/4 cup of sour cream
- 3 squirts of Sriracha sauce
- a couple dashes of Chipotle powder
- salt and pepper to taste
Directions:
- Grate zucchini and stir in some salt for them to sweat for about 15 minutes
- Squeeze out liquid from zucchini
- Mix all ingredients together
- Heat oil in no stick pan. Over medium high heat, place batter in the pan and flatten the top. Saute each side for about 5 minutes till golden brown.
- Serve hot plain or with dipping sauce
